A vegetable garden with no digging, no pesticides, no fertilizers, using minimal water, and resilient to harsh weather conditions.
The vegetable garden is just one of the many different agricultural systems within the living permaculture ecosystem-farm. A wide range of skills and craftsmanship are needed to maintain such a productive and healthy vegetable garden. The workshop will cover all the techniques involved and reveal secrets discovered by the presenter through 24 years of research and hands-on experience, gained both in urban settings (balconies, rooftops, courtyards, ground-floor open spaces) and in rural landscapes, and of course at “the little school of the earth,” the permaculture farm and education center.
Short Biography Michalis Maniadakis
Once upon a time… I grew up in a suburb of Thessaloniki (Agios Ioannis), in the early 1970s, and even though the homes we lived in were “lower-middle-class” working housing, I felt as though I was living in a “rural village,” since all around, as far as the eye could see, there were small woods, almond trees, fields of wheat and barley, orchards, horses and donkeys, cows… Whenever I turned my gaze toward the apartment blocks, I felt saddened, and then I would look out over the endless meadows and my soul would feel freedom and abundance… Together with other children from the neighborhood, with imagination as our ship, we would dream up the most improbable games, using whatever materials nature generously offered us, as well as the “ruins of civilization”…
These images gave me an inner treasure and a motivation to recreate, in my adult life, the little paradise I grew up in! Until I discovered Permaculture, and after that everything found its path…

Υπάρχει η κατάλληλη στιγμή να γίνουμε γονείς; Αν η γονεϊκότητα είναι πλήρους απασχόλησης εργασία ποιός θα μας πληρώσει τελικά γι’ αυτή; Είμαι 30 χρονών μήπως να καταψύξω τα ωάρια μου; Γιατί το κράτος έχει λόγο για τη μήτρα μου; Πώς μοιάζει μια μαμά; Πώς μοιάζει ένας μπαμπάς; Το σχήμα μαμά-μπαμπάς-παιδί είναι το μόνο εφικτό; Τι ρόλο παίζει η κοινότητα και η πολιτική συγγένεια στην απόφαση να γίνουμε γονείς; Τι προβληματίζει άραγε τους άντρες συντρόφους μας ως προς τον δικό τους ρόλο;
Is there a right time to become parents? If parenthood is a full-time job, who will actually pay us for it? I’m 30 years old — should I freeze my eggs? Why does the state have a say over my womb? What does a mom look like? What does a dad look like? Is the mom-dad-child structure the only viable one? What role do community and chosen kinship play in the decision to become parents? What concerns might our male partners have regarding their own role? We discuss such thoughts, concerns, and questions among ourselves, to a greater or lesser extent. Let’s open up the conversation, with the aim of going deeper, reflecting, empowering ourselves, and gaining knowledge collectively within our communities. We believe that the issues of motherhood/fatherhood/parenthood are, at their core, political and interdependent. We hope, then, to create the right space for our stories to be heard and for our thoughts and concerns to be voiced.

What if a tiny seed could become an act of resistance, hope, and regeneration?
Seeds of Change is an immersive workshop that invites participants to reconnect with nature through the powerful story of seeds.
Together, we will explore how seed diversity lies at the heart of healthy ecosystems, resilient communities, and sustainable food systems, while reflecting on the growing challenges posed by industrial agriculture and the loss of biodiversity.
Inspired by experiences from Greece and Italy, we will share stories, knowledge, and local practices that celebrate native seeds as living heritage, carriers of culture, memory, and adaptation across generations.
The workshop then transforms into a collective hands-on ritual.
Using clay, compost, and native seeds, participants will create seed balls, small capsules of life designed to protect seeds until the right conditions allow them to flourish.
Before mixing the materials, we will take a moment to observe the seeds, connect with them, and set a personal intention, infusing each seed ball with care, hope, and purpose.
As our hands shape the earth, conversations will naturally unfold around seed sovereignty, biodiversity, and the importance of protecting and freely sharing seeds for future generations. Every seed ball becomes both a practical tool for ecological restoration and a symbol of our shared commitment to nurturing life.
The journey concludes with a simple yet meaningful act: participants can either take their seed balls home to green their own communities or sow them together on the land that welcomes us. A small gesture with the potential to grow into something much larger, a living reminder that lasting change often begins with a single seed.
A short biographical note (bio)
Hello, I’m Rubina!
Raised in a small countryside town in Northern Italy, I have always been exposed to cultivated lands heavily treated with chemicals and the only focus on the final “product” – mainly grapes.
During my years travelling the world and training as a sommelier, I discovered alternative ways to cultivate land and grow grapes: I took courses on regenerative farming applied in the vineyard in Spain, and on soil health and soil fertility in Italy.
When I first got to know natural farming according to Masanobu Fukuoka in 2021, everything made more sense to me. 2022-2025 I was an active volunteer member of “RAN – Rete per l’Agricoltura Naturale” association in Italy, focusing on spreading the principles and practice of natural farming around the world.
For that association, I organised freely-given workshops all over the world, travelled to Africa to raise awareness about biodiversity and agriculture, travelled to many farms in Europe, Japan, USA and Bolivia to liaise and share farming experiences, and I started giving seedball workshops after a training with Panagiotis Manikis in Alagonia, Greece, in 2024.
In summer 2026 I will move from Northern Italy to the regenerative oasis of Terramore in Abruzzo, Southern Italy, to start a a shared gardening project with the founders of the association.
My biggest living inspirations are Dr. Vandana Shiva (navdanya.org) and Dr. Zach Bush (farmersfootprint.us)
Workshop Duration: About 2.5 to 3 hours
Number of Participants: maximum 40 people
Target Group of the Workshop:
This workshop is open to anyone interested in nature, biodiversity, sustainability, and community action. It is especially suited for young people, youth workers, educators, students, environmental activists, gardeners, farmers, artists, and anyone curious about seed sovereignty and ecological regeneration.
No previous knowledge or practical experience is required—only a willingness to learn, create, and connect with others. The workshop is designed to be inclusive, participatory, and accessible to people from diverse cultural backgrounds and experience levels.
Climate change is not only an environmental crisis,it is also an emotional and relational one. Many young people today experience eco-anxiety, grief, anger, and a profound sense of powerlessness when facing the future of our planet.
Inspired by Joanna Macy’s Work That Reconnects and the principles of Deep Ecology, this experiential workshop offers a safe and supportive space to explore these emotions collectively rather than carrying them alone.
Through a carefully guided journey based on gratitude, compassionate witnessing, and active hope, participants are invited to reconnect with themselves, one another, and the living Earth.
The workshop combines reflective dialogue, embodied practices, mindfulness, nature-based experiences, and group processes that encourage emotional resilience and ecological awareness. Participants will engage in gratitude circles, practices for honouring ecological pain, guided exercises that cultivate empathy for all forms of life, and visioning activities that inspire meaningful action.
Rather than avoiding difficult emotions, this workshop recognizes them as expressions of our deep connection with the Earth.
By transforming fear, grief, and frustration into shared purpose, participants discover that personal wellbeing and ecological regeneration are deeply interconnected.
The experience concludes with practical reflections that empower participants to become active contributors to a more regenerative, compassionate, and resilient future within their communities.
Target Group & Learning Outcomes
This workshop is designed primarily for young people, youth workers, volunteers, students, environmental activists, and anyone seeking healthier ways to engage with the ecological crisis.

Through Terramore, she accompanies individuals and groups in rediscovering a slower, more connected, and collaborative ways of living.
Her professional background includes:
Silvia’s facilitation style combines mindfulness, embodied practices, emotional awareness, systems thinking, and nature-based learning to create safe, participatory spaces where people can cultivate resilience, deepen their sense of belonging, and become active contributors to a regenerative future.
Water is the foundation of every resilient landscape. In Mediterranean climates, learning how to slow, spread, sink and store water is one of the most powerful ways to regenerate ecosystems, increase biodiversity and create abundance.
This workshop offers an introduction to water resilience design through the lens of Permaculture. We will explore the principles behind designing integrated water systems, including landscape observation, contour-based design, swales, infiltration strategies, rainwater harvesting, ponds and the role of vegetation in the water cycle.
Participants will gain an understanding of how these elements work together to restore the hydrological balance of a landscape.
The second part of the workshop focuses on the ecological importance of water bodies within regenerative systems. We will explore how even a small pond can become a biodiversity hotspot, regulate microclimates, support beneficial wildlife and strengthen the resilience of the entire ecosystem.
To conclude, we will put theory into practice by co-creating a small pond near the vegetable garden, experiencing firsthand how thoughtful water design can transform a landscape while fostering collaboration and connection with the living world.
Participants are encouraged to bring:
Work gloves
Sturdy shoes or boots
Workshop Duration: 3 hours
Number of Participants:
There is no participant limit for the theoretical session. The practical session is limited by the available workspace around the pond and the number of tools provided. Since we will be building a small pond, a smaller group is recommended to ensure everyone can actively participate.
Target Group & Learning Outcomes
Open to anyone interested in permaculture, regenerative design, water management and resilient Mediterranean landscapes. No previous experience is required.
By the end of the workshop, participants will:
Understand the fundamentals of water resilience design in Mediterranean climates.
Learn the main permaculture strategies for harvesting, storing and managing water.
Recognize the ecological value of ponds within regenerative systems.
Gain hands-on experience in the creation of a small pond.
Facilitator Bio
Toti Salemi has been studying and practicing permaculture for over 14 years and is certified in Social Permaculture.
His approach is rooted in the understanding that healthy ecosystems and thriving communities emerge when we learn to observe natural patterns, work with living systems and cultivate meaningful relationships across both ecological and human systems.
Over the years, Toti has collaborated with and initiated regenerative projects in Costa Rica, Tenerife and Italy, exploring how permaculture principles can be adapted to diverse climates, cultures and landscapes.
In 2011, he collaborated with AgroZapotal in Costa Rica. In 2013, he lived for a couple of years in Central America, where he later founded the rural project Finca Feliz.
In Italy, he created the itinerant project Gira e Coltiva, collaborating with model permaculture projects and offering his support to regenerative initiatives.
In Tenerife, he collaborated with Manantial de Tara in 2015, working on the design of synergistic garden and later founded Estilo Verde, which he developed from 2016 to 2020.
These experiences have shaped an approach that combines ecological design, deep observation, resilience thinking and an awareness of the subtle relationships that connect all living systems.
Since 2021, Toti has been the co-founder of Terramore, a regenerative farm and non-profit organization in central Italy. Starting with an abandoned land, he has designed and guided the development of integrated water systems, agroecology and food forests, transforming the site into a living example of ecological restoration and regenerative design.
Alongside the technical aspects of landscape design, Toti embraces a holistic perspective that recognizes the relational and energetic dimensions of regeneration.
For him, restoring ecosystems is inseparable from nurturing human well-being, cultivating presence and creating spaces where people can reconnect with nature, themselves and their communities.
